i5 or less is gonna bite you in the ass hard as we move forward in gaming tech.

If you only WoW and other old games, then then yes, this statement is correct. There are a variety of games out currently that make use of more cores and run better with more cores and that trend is only going to continue. With CPUs lasting MUCH MUCH longer than they used to, it is not quite as cut and dry as you are making it out to be.
It's not even. The culprit is DX11 and it letting 1 core communicate with the GPU at a time(oversimplefied).
So as WoW really ain't high CPU demanding game as todays standards, you will see 1 thread going nuts in places where drawcalls increase to a point, you are bottlenecking at 1 thread level.
Blizzard cannot do anything to resolve it, it would basically need to create a whole new engine for the game with Vulkan support, but for a game this old, it's probably not worth the money, considering how massive of a task it would be. So unless there is a "WoW2" in the future, we will likely never see good performance on high drawcall areas when it comes to WoW.

Either way, the i3 that you are arguing for is a fair processor. It works really well. In fact, in WoW specifically, it probably works near-equally well on the same clocks as the i7s of the same generation would (barring the L3 cache differential).
This was not your claim, however. It was that anyone buying an i7 was lacking in the intelligence department and Wow works perfectly well with only a single Core. Something that is woefully untrue. This does not mean that the WoW code is a multi-threaded phenomenon, it certainly is not, but it does gain value past the second core of adding more.
If you instead would have said "If all you do is play Wow specifically, you would be equally well off with an i3 for less money" and this would be true. But you didn't.
The question posed was more of a generational conundrum to me than "do you need an i7 to game", and therefore what I answered.

You get 1% to 3% performance loss in games with hyper threading activated.
Not enough that I would bother turning it off but it's still a performance loss.
And I learned years ago that synthetic benchmarks have no relevance on what I use my computer for (gaming, YouTube, Netflix) so I don't care about those.

If anything, you're going off outdated information. Time to start checking the latest benchmarks and update your view of the computer world and its inner workings.
8700K will likely be relevant for much longer. That said there is nothing stated (afaik) that WoW will take advantage of more cores in the future. Even if they did a "DX12-overhaul" a 4 core would take a lot of advantage from that as well. Right now it's hard to measure any difference beyond 2 cores.
This entirely depends on the game. For WoW probably yes. Many newer titles no.
