Heres my ui, don't have a ret pov vid yet but when I do il post. I could clean it up a bit but it will always be a bit messy, kind of like my room.
I think I'm slowly getting there with my UI. I can be very picky about stuff, so sometimes the smallest things takes me days (...took me around 8 downloads of fonts, before i found one, that i found decent).
Pretty sure that its easy to see where alot of my inspiration comes from (great UI youtube series :P )
Most of the elements for my prot pala is in that ss, except castbars, which are placed below my holy power indicator, the mid screen DBM warning and since crusader strike isnt on CD, you can only see the background (why the line above my holy power indicator is so fat)

There you go. Beautiful - did you find some of your inspiration from Touchymcfeely? It looks like it a bit. I like what you've changed though. Out of curiosity, what data text addon are you using?
The font i use in it is Elemental End, and its a free font.
So here's what I'm rolling with at the moment:
Considering hiding my player frame and cooldown bar active on mouseover when out of combat, and fully visible once in combat.
Dbm is still pretty much unconfigured. Will sort that in the near future.
Also, for some reason; when I take a screenshot in combat, some of the borders on texts and such go a little blurry, after I upload them to Imgur. Just pointing that out so people don't think I'm running with nasty blurry borders
Just an idea of where everything is on my screen (when it appears, of course)
Have not logged on to a class where a pet is used yet (or summoned my Water Elemental :P) so the pet bar is unconfigured also.
I've always been very stubborn about swapping to ElvUI, but now I see that it is very awesome :P
Maybe now people won't ask me to upload my UI, as they can simply make it themselves! Hehe! ^_^

It can take me months to get a UI how I want it, sometimes I can work on one for 3 months and end up scrapping it. Don't expect to get a UI that's perfect in just 3 hours ^^
Take a look at the gallery in my sig; that's just a very small amount of UIs I've started and/or worked on that I managed to find lying around. If I had my old HDDs there'd be hundreds of screenshots.

Edit3: @pixil, are you using separate unitframes? i cant seem to make mine look like yours via ingame options.

There is no way to detatch the power bar from the healthbar using ElvUI (which annoyed me at first too). At the moment I'm rolling with health and power bars together.
My unitframes are the default ElvUI ones, configured quite easily to look the way I have them.
Like Carebear said up there^ UI configuration can takes AGES. On this ElvUI edit, I spent more time than I'd like to admit teaching myself how to change things I wanted to change etc.
Carebear mentioned that he can spend months on a UI and then star tall over again (which can be seen in his UI gallery) which is similar to me also. I've been using the UI that I had before this ElvUI one for about a year now, but before that I would change it almost every week, just to get it right!
Just stick at it and you'll get there!
Regarding the unitframes issue: the actual unitframes are 214pixels wide, and 18high. The power bar is 3pixels high. The textures I'm using are named ElvUI Norm and I'm not actually sure where I got the font from... but it is a edit from the "Skurri" font. You can find the font in many other AddOns though, which I mentioned up there^. Also remember that I'm using the Pixel Perfect skin. (You can change the entire skin of the UI in the installation process when you first set up the UI.
