Jewelcrafting.
Maybe enchanting, maybe tailoring, maybe others. But Jewelcrafting would probably be the best profession in terms of buffs. For pvp, Engineering can also be decent (although I think they nerfed some of the "invisibility detection" types of items that Engineers can create).
This is for PvE, but might provide some insight into professions in 3.1: http://elitistjerks.com/f80/t53164-p...a/#Professions

I think picking up Tailoring will be good, as after change it can provide you with more dps using "Improved Embroideries", and even if u do PvP having this little boost can help out alot.
I prefer other enchants like 35 spell pen on cloak

Tailoring is certainly a great profession for warlocks.
The lightweave embroidery is great in pvp. 250 spell power with 33% up time is much better than just having 83 spell power in pvp.
It gives your damage spike instead of consistency. Consistant damage is easy to heal through. Spike might get you a kill when you otherwise wouldn't have.
Frostweave nets are awesome in BG's and world pvp as well.
Ideally I'd like to go tailoring/engineering as a lock pvp'er.
