Technically, its not a "cap." It is actually the defense minimum needed to not be critically hit. This number has been 535 def for all heroics and 540 def for all raids since WotLK. However, like many people pointed out, you actually do still gain from defense after reaching the "Crit Immune Minimum"(I cant remember who I stole that from, but its on EJs or maintankadin or something).

It should also be noted that the extra defense can come in quite handy on bosses such as Thorim or Gothik where a debuff is placed on you that lowers your defense/stats, causing you to be able to be critically hit. Certainly if you have gear like Kungen's you far and away out gear fights like Thorim and Gothik, but there are sure to be more fights where a debuff like this will be employed on the tank.
