I don't think it matters if it's called "Frost Witch" because it doesn't necessarily mean that Blizzard are saying WE are witches, we're simply wearing the armor of one (and while it's common to associate the word "witch" with females, male witches can easily exist as well). A Rogue wearing a geist outfit doesn't make that Rogue a geist, and a Mage isn't suddenly a necromancer. If anything these tier sets seem like disguises to help us blend in when we're running around ICC.
If you're really that worried that we're going to end up looking like the more traditional kinda witch (pointy hat, broomstick, warty nose, etc) then just look at Warlock T10. I doubt Blizzard'll have us looking very similar since Warlocks and Shamans are not alike.
That said, I can see why it's not that fitting considering our old tier set names (Skyshatter, Earthshatter, Cataclysm, etc) and we only have 1 or 2 spells that are in the frost school to begin with, but I'm gonna withhold judgement until I actually see the tier set. There's obviously a reason Blizzard have delayed it this long and I guess they found it more difficult to come up with something suitable for us since shamanism and the Scourge don't really mix, not even in a dark way (you could argue that the Lich King was a former Shaman but I disagree, Ner'zhul stopped being a Shaman once he was imprisoned by Kil'jaeden and pretty much stopped existing altogether once Arthas decided to consume him).
