Blood is very viable for high end raiding, as is frost, but they work very differently, and trying to mix-and-match them will end with a dead raid and an angry guild. Sry.

Would do better. You get 3% improved stamina from Veteran of the Third War, all the extra mitigation and avoidance from the frost tree along with the potential benefit of using one or two tanking one handers. The downside of course being that your threat could well be pretty poor and your AoE abilities is back to DnD and Blood Boil which isn't fantastic for Frost. The only plus being that with truckloads of death runes you could spam Blood Boil a lot which may or may not work.
With enough misdirects it would probably work, a DK equivalent of the warrior 5/15/51 spec, focussed on maximum survivability at a hefty cost to threat generation

If you want to dual wield, go Frost. Frost is the dual wield tree. The other 2 trees are strictly 2H or you will suck. That's all there is to it.
