Ensiferum, very awesome Folk Metal that gives you the "Medieval" feeling, without being as cheesy as Rhapsody. And they also have some interesting mixtures of wild western music in them.
Smoking Ruins
and Stone Cold Metal along with One More Magic Potion, Old Man or Iron should give a more or less accurate feeling of their music.

PS: listen to ~6:00 in Stone Cold Metal if you ever wanted to hear a banjo in a metal solo.

Kingfisher Sky - for those who like Nightwish/Within Temptation/Echoes of Eternity

Touchstone - Semi-Chunky rock with progressive over-tones (Not a huge fan of prog personally, but these are pretty good). Recommend Black Tide/Winter Coast - not to be confused with a band of the same name that specialist in Folk :P
