There's really not that many decisions to make. 4/5 DPS slots have to be the pure classes, and only 1 healing class can be anything but healing. So it really it becomes a question of which hybrid DPS do you want? Shadow Priests own in 10-mans. They give you replenishment, raid healing, amazing AOE (vilespiritslol), and unmatched survivability. If you want a Shadow Priest, then the other 3 healing classes have to heal, meaning you have to bring a Prot Warrior and DK tank.

I've done plenty of raids without replenishment, its convenient for sure, but you won't omgdie without it. So for me, it would be whatever spec the lock/hunter are comfortable playing and do their best as. On Saurfang 10man heroic, I regened a bit over 20k mana (holy paladin) from replenishment, that's about 3 full pleas. 3 full pleas = a 45 second window where the tank + the mark you are healing have a 100% higher chance to die.
If you were to make YOUR ideal raid, with everyone liking the spec they play, you should really find someone who enjoys playing a spec with replenishment.
