Hello, i'm having doubts which gems should i use for my prot pala. As i'm deff capped, should i go pure stamina, or go for socket bonuses?

You should throw in a fat stamina gem in your current helmet (as the socket bonus is a merely +8 hit) And put in the purple gem into a socket that provides the most stamina as possible (Perhaps your legs, not sure what the gem requirement is).

go for bounses if they are +12 stam ( head) and sometimes +9 stam
