Okay, say I have a level 80 DK and a level 80 rogue. The rogue is a 25-man kingslayer, the death knight is not.
If I, half way through a pug, log my rogue at gunship, enter, switch to heroic, then log back onto my DK, will it stay heroic mode, or will it go back to normal?

It stay in Heroic mode... but you need to give raid leader to your rogue and then set it heroic
then you can hearthstone and log your dk ^^

You can tell WoW changed the MMO for good when players started complaining about the amount of time they sink, into a time sink.
