Considering many professions are not complete I would wait. This is like asking who will win the world cup before qualifiers even started, you will get 10 different responses and everything is a guess at the moment.

Probably not the real FOTM but I like the way Engi + JC looks.
Take the special Engi. gems (and the usual fluff), combine that with the special JC gems and I think you have quite a nice bonus going for you.

Engineering and mining, mining gives you +120 stam
and engineering gives you all the nice bonuses :P

120 stam will be less importan than 60 stamina now.
