As a holy paladin, the O'shit button for when I have neglected the tank, or simply just not timed my heals well, it's lay on hands. When it's because of me standing in a bad spot and dmg will soon kill me, it's bubble

Shift-E = healthtrinket (PvP trinkets, Skeleton Key, etc), healthstone, alchemist unlimited healing potion, glyphed stoneclaw totem, etc.
E = Interupts (Counterspell, Wind Shear, Shield Bash, etc)

Shaman:
Resto - num0 = NS+TF+HW on self
Ele - 3 = Thunderstorm
Shift-Q = Ghostwolf

Edit: Also put heroism on num+ to prevent me from accidently hitting it when I'm not supposed to hehe.

Mage:
Shift-´ (next to backspace) = Invis
Shift-+ (2 keys left of backspace) = IB (and cancel IB)
Shift-Q = Blink

Warrior:
Shift-+ = Shield Wall
Haven't spent so much time redefining hotkeys yet - will redo them when I reach 80.

Almost every PvE mechanic (from Algalon Big Bang to Arthas's Fury of the Frostmourne(with a bit of help from Pain Suppression and a raid wall) or PvP whenever your about to take alot of pain and fast.

for lock (pvp char mainly) i have battlemasters trink and healthstone macro'd together for incoming brostorm or other clusterfuck in BGs.
Frost DK its blood tap + unbreakable armour to burn a blood rune and not fuck up my precious frost/unholy pairs ^ ^ again just for burst time not so much ohshit moments, for those just hit up ams and icebound fortitude and hope for the best.
