Profession Beta Questions

Hi all, just a few quick questions about Professions in cata, since i dont have the beta myself

1) Will you be able to trade Ink of the Sea down to lower-quality inks via the Ink vendor, or will you only be able to trade the new ink to lower-level ones?
2) Has anyone levelled JC on the beta from 500 to 525? And how long did it take you?
3) What is the lowest level to learn Illustrious (Insert Profession)?
