Good gold making profession in cataclysm?

Hi,
I haven't been playing since mid wotlk so I'm not sure where to catch up exactly with professions etc. Just thought you might be able to help me. Question is, will Herbalism and Mining still be a good source of gold? When I was playing the values of herbs dropped a lot and they also nerfed Frost Lotus so I'm not sure if I should ditch that for Skinning or would I be better off not going a gathering profession?

Early on there will be a surge in those powerlevelling crafting professions, so gathering professions as well as being easier to level, will be very good for making money.
Mining and Herbalism more so than Skinning if experience is anything to go by, but those will have considerably more competition.
Looking at the prices and perspective of current herbs/ores will do you no good since their demand will be only with those using them as a stepping stone, and will likely see many having stockpiles already.
