I believe you only need to fly to the entrance of the new Cata instances to be able to queue for them. The rest of the instances for leveling between 1-78 you don't.

Most have to be discovered again, especially the Northrend ones. I had only Culling of Stratholme discovered when I logged in after patch. Also some of the low level ones needs to be rediscovered, however those you can't use LFG for anyway so I'd still have to go to the entrance for those ^^

You should only have to "discover" new ones. The fact that it's all is a bug. Will be hotfixed.
