I challenge you to find a set of mobs that can kill you as a properly played paladin before you hit 65. And even after that it's still a breeze, easiest class so far I've done out of Warlock, Hunter, Druid, and Paladin.

To be fair, I should point out that I only leveled the lock, hunter, and druid from 80 so the new cata experience may be treating them well at lower level I wouldn't know.

The best must be Hunters. Then I think Druids and Paladins can share the second place.

Not much a hunter can't solo, in terms of content. I had normal Stonecore and Vortex Pinnacle on farm, can skip most trash because of Camo. I know many hunters can do Eye. I also do H UP daily and its pretty faceroll.
