My system has been running incredibly slow lately and I have been getting a lot of errors. I'm on the verge of just backing up my files i need and doing a complete factory restore. Only thing is.... I really don't want to spend 4 hours again customizing my UI. What do I need to backup so that I can just copy/paste and it all be the same when I reinstall WoW?

Your settings are stored in the \WTF\ folder. The addons themselves are in the \Interface\Addons\ folder. Just zip those up and stick them somewhere safe, then unzip them back to their original locations when you're ready to go.
