Toastie: Tuna Melt!

Just last night I made a kick ass sandwich.

two pieces of sliced foccacia bread, with some thick cut bacon which was grilled with cajun seasoning and extra black pepper, with colby jack on one side and gorgonzola on the other side with some hot sauteed onions, then butter and grill it on both sides to make a very very awesome grilled cheese.

I am kind of on a grilled/toastie/melt thing since yesterday, so tonight;

Fried Chicken strips, with some swiss cheese on sourdough and mustard is going to be it tonight.

and I have one more super awesome thing to make, its a fried mozzarella sandwich, I believe it is Czech in origin, this recipe anyway.

Start with a bread sized cut of mozzarella, then dip in beaten egg and from there into bread crumbs, maybe even double dip to get it coated well. Pan fry each side quickly then put it on some nice butter toasted bread and you have an awesome mozzarella sandwich.

I also make a kick ass toasted italian sandwich.

Hot Salami, Prosciutto and pepperoni quicky grilled and then placed on toasted sourdough with marinated goat cheese and topped with spring mix greens.

I love breakfast sandwiches with toasted bagels (onion bagels, yumm..) eggs, bacon, cheese.. so good.

For people who don't know what a toastie is, it is also referred to as a 'grilled cheese'.
