I use them on my inscriptor, I usually run 200-300+ glyphs on the AH at a time, cancelling/expiring/relisting - even just a few extra slots can make one less overall trip to the mailbox, all saves time As I only use her for making and selling glyphs, there's no reason for me to use regular bags at all, the ONLY thing I ever do on that char is inscription.
I've used enchanting, engineering, and inscription bags, although I only used inscription bags on a bank alt.
Honestly, they can be great not only for the extra space, but also for easy organization of your items. They also make it easy to bank all your mats since you can just swap the whole bag out for one in your bank.

I use them quite a lot - 36 slots compared to a maximum of 26 normally not to mention that the 26 slot bags are way to expensive and usually cost 4-6 times as much as the profession bags.
My enchanting toon has 4-5 of these in the bank plus 1-2 on him. I have a packrat which has his bank and personal slots filled with ore bags and a herb toon which has 6 of these. Plus a few bags on misc toons.
Yep using Mining back on my paladin, Engerneering (in bank tho ) on my Rogue.

The amount of ore etc I get through practically requires the use of 3 large mining bags or have my mailbox jammed with 300 mails for days.
Constantly. Main has had an engineering bag forever - there are so many little spare parts that I don't want to have to remake every time it's time to tinker new gear. Enchanting bag similarly. Inscription bags because I make huge quantities of inks for glyphs and darkmoon cards. Herb and ore, of course. I'll use a gem bag as soon as I get the recipe on my tailor (I have around 40 stacks of uncut gems at any given time). If you play the AH game much and use a lot of raw materials, they're really sanity saving.
Toolbox in my engineer's bank, but mostly, no. I use cargbags_nivaya, which auto-categorizes stuff for me. (Weapons/Armor, Consumables, Trade Goods and so on) I'd much rather have large-ish bags that can fit anything in them rather than one large bag that only holds certain stuff. It doesn't help that I'm comically OCD about the status of my bags/bank. Must be tidy. Everything must be tidy. Yes. Tidy tidy tidy.

Soul bags when soulshard cost 1x bag space...
I have one of the largest enchanting bags in my bank, and it's full to the brim, and I still have enchanting mats elsewhere. So yes.
3x Alchemists - Hyjal Expedition Bag (why are these still green?)
2x Engineers - Elementium Toolbox
1x Jewelcrafter - Luxurious Silk Gem Bag
2x Scribes - Royal Scribe's Satchel
2x Enchanters - Otherworldly Bag
1x Leatherworker - Trapper's Travelling Pack (WTB 36 slots, heck even 32 slots)
Generally all of these are kept at capacity for those "just in case" moments although I don't tend to use mining bags since illusionaries hold the ore just fine short term and usually doesn't take long before it's sold, prospected or smelted to craft.
If a character of mine is a gatherer, it will get a bag for that profession. My warrior is an exception as it has skinning without the bag, but I send full stacks of leather to my rogue before logging out. Bags for crafting professions are usually in the bank only, with the exception of an engineering bag on my main and an inscription bag on my alt DK. The engineering bag holds volatiles and other elementals, my engineering portals (3 of them), my mailbox, my Jeeves, my mote extractor etc.
I even have the fishing bag in the bank on two characters. Having stuff sorted certainly beats having bags that can hold anything. My druid's bank (enchanter and jewelcrafter) is already a mess, if I'd replace my 20-slot gem bags with an Embersilk bag it would be even worse.
I've not once used them and I've been playing on and off since vanilla. I just kit out my toons in the biggest slot bags available and it's always fine.
I have mining bag, engineering bag. That's about it.
I used them back in the day, but not so much now.
