Lifeblood vs normal profession as Demo

Would 480 haste used during demo form be competitive with a normal raiding profession?

Not as much as other professions unfortunately. Int is superior to all

Herbalism is one of the worst professions you can have. The worst being mining and skining.
Haste is nice but int is like twice as good. If you have the time and money for it, get tailoring ( best profession) or alchemy/inscription/engineering/enchanting/leatherworking/jewelcrafting/blacksmithing instead.

It'll depend on how close you are to the extra-tick haste point for your DoTs and a lot of math to give a definitive answer but in general my answer would be "If you like herbalism: keep it. If you don't, and you have spare gold, switch it."
it's not worth sacrificing int for haste to reach an extra tick unless you are extremely close to the plateau.
lifeblood is an on use effect wich means you wont have a 100% uptime on the haste which means that not every casted dot will get an extra tick.
If it was a passive bonus, you might consider taking the haste over the int but since lifeblood is an active bonus, it's a NO.

Tailoring won't match your meta + dms + chalice after the first big burst, icd = 64 seconds. So herbalism is not the best bonus to start a fight but will be in perfect line after, especially if you are an orc. It's a cd and demonology is all about /2 min CD.

If you switch, each time, on your felguard for the demonsoul, then the haste bonus become : 480 haste x 1.15 ( DmSoul haste ) =552 haste.

    Herbalism is fine.

With 2030 haste + herbonus, you gain an extra tick for immolation aura.
