What professions should I pick up?

I'm leveling my last alt - a shadow priest, and am stuck on what professions I should get on her. I already have the other 9 classes at 80+ and currently I have:
    3 miners
    3 herbalists
    1 skinner
    1 tailor
    1 enchanter
    1 leatherworker
    1 inscriptionist
3 alchemists, one of each specialization
    1 jewelcrafter
    1 blacksmith
    and 2 gnomish engineers

So for ease/gold making value, which two should I pick up on my spriest?

I would say tailoring and alchemy. The latter will give you a nice trinket to start with, and tailoring is just awesome for any cloth wearing class.

I'm mostly leveling this character as a time-sink; Priest isn't my thing. So it doesn't need to be professions that would benefit the class.

If you have no intention of playing the char again once you hit endgame and you're just killing time by levelling another char, personally I'd take mining and herbalism and just farm as you level.

The best solution is to level with mining and herbalism, then you'll have enougth materials to easily level both alchemy (transmut specialisation) and JC when you hit 85.
Transmut specialisation is the fastest way to make money (200 - 700 gold in 2 minutes since cata launch) but you need several alchemists to have a confortable daily income.
Change all those herbalists and miners to alchemy.
Jewelcrafting is generally a good profession to learn on several alts, the daily takes more time and is less profitable than alchemy transmut but it's not bad to get very quickly all the JC receipes, and selling gems is always a good money maker.

Tailoring is a great for clothy's for a few reasons. Even if you do not have access to the best recipes (firelands at the moment), the belt piece is a 'must have' for clothies. Also, your chances of getting cloth from mobs is better, and this sells great on most realms.

I'd go Mining and Herbing imo they're the easiest ones to gain gold from if you farm with them a lot.
