They converted all valor/conquest points to justice/honor points.

So all saving them will do for you is allow you to splurge on t12-level items, assuming they drop down to Justice points (which tier 11 did with 4.2)

Any points above the 4000 cap were converted into gold.

Yeah they did, so no, it doesn't make a difference if you save them or spend them before the patch.
