Juking in its original sense would be to trick the everliving hell out of your opponent using line of sight, skills, items, etc. Since LoL doesn't have as elaborate of a line of sight-system as DotA, it usually just means dodging skillshots or hiding in a brush.

That was so easy to understand, it's almost unbelievable.
