I'd considered polearms but for some reason the idea that we could potentially use axes never occurred to me.
This could definitely do with testing.

The weapons that share weapon animations are:
One Hand Mace/Sword/Axe
Two Hand Mace/Sword/Axe
Staff/Polearm
Dagger
Fist Weapon
So those should be the transmog limitations as well. The question however is can we actually do the transmog if we can't use the weapon itself...
Here is your own set in the viewer if that's what you were looking for: http://www.wowhead.com/compare?items...;102673:10+0:0
To use the model viewer for sets open the following link (http://www.wowhead.com/compare) click the "add item" or "add set" buttons on the top right and search for the item you want to add to the set (or the set itself). Next you want to drag all the items on top of eachother so that they form a set (you can also drag items out if you change your mind about a specific peice). You know they have formed a set when you see multiple item icons in one box. Once you are satisfied w/ your set click the small arrow on the top left of the box that contains your set and choose the "view in 3D" option and you are done. Note: If you want to link your set in forums make sure you hit the "Link to this comparison" button at the top and use the url of the page it brings you to.
If you want to know more about the item comparison tool: http://www.wowhead.com/help=item-comparison
Btw I like your set. Might I suggest http://www.wowhead.com/item=6613 (3D View) Personally I like them better w/ your set but the ones you've chosen also match /shrug.
Hope that helps
Edit: I also don't really like your shoulders =\
Some sugestions:

But of course thats just personal preference =)

I thought the only restriction they were removing was the 1-hand main-hand sword thing?

They are, but they're also allowing transmog for weapons with identical animations, as I posted above. However, you'll obviously have to be able to use the weapon in the first place.
Good to know. Shame we can't use polearms (<3 Black Ice)
Thanks Shangalar

I love it and it cost a fortune.

No Brackish Gloves to complete the T11 priest set yet (I'm frost.) and also awaiting changes to transmog gear so I can use Life and Death. Not sure on what to make my off-hand yet though...
Upon the bed and almost dead
She looked down on me
From the tapestry threads her hand did reach
My spirit now set free...
Gotta love the Mage T2 with Ultramarine Qiraji Battle Tank!
And I wish I could XMog my TF! Gotta keep it old school.

Finally got my hands on an interesting offhand (http://www.wowhead.com/item=15986), enabling the "Battlemage" transmog, can't think of any sword that would go well with T4, that staff-offhand. Also, don't know if there are any other goggles that would fit better, I just love the details in the new ones.
I'm a sucker for the Tirisfal Regalia, so it's what I use.
Offhand is Tome of Fiery Arcana, from the AV Vendor.
Sword is Spine of the Thousand Cuts from Dragon Soul trash.
Tabard is Tabard of Flame.

You could always get Slayer of the Lifeless(http://www.wowhead.com/item=39344) or Life and Death(http://www.wowhead.com/item=40336). Personally I prefer Slayer of the Lifeless as it's located on your back.

Thank you so much for the help! It's still a work in progress. I've had trouble finding weapons I like. I want to get the Peacekeeper's Blade from ToC5h and this stick of dynamite OH, if I can't find anything else mech-ish.
And I agree: Aurora Mantle would be much better :P
Ive got the Aldor Regalia (Tier 4) set on my mage main. I just love the way it looks...very magey and very cool.
Almost finished my green pride set. Worked out that only a female orc can pull this set off, but as that's what I am...
Looking for an offhand to finish it off. Suggestions would be welcome.

Wanted to be very arcane/battlemage/intimidating/quel'dori type of look
