Has a detailed video about the Crew Skills part of companions been posted, at all? I'd like to learn a bit more about that side of the companion system.

There was a QA interview with Damion Schubert by TORWars here (Sept 2011):

Of interest from that article:
TORWars:
Thanks so much for chatting with us today, Damion. What system are you most looking forward to watching a million players get their hands on and why?
Damion Schubert:
By far, Crew Skills. Making the crafting system take advantage of the existence of your companions has been an extraordinary success, and allowed us to do some neat things under the hood. Also, we have a couple of twists that we’re pretty sure are going to surprise people in the amount of depth and extensibility they bring to crafting.

edit: also from the DH interview, rewards from crew skills / missions have a chance to "crit", such that a reward could be randomly awesome.

It's a beautiful area of the game. It's crafting ++
I am really excited to learn more about Crew Skills, now that the press NDA has changed I hope we will have more articles focusing on this. So far the only site I have found talking about their experiences with crafting is IGN.
IGN: The Old Republic: Companions and Crafting - Oct 20th
(I cant post a link, if you google search: ign "companions and crafting" you can find the article)
Once you have a crafting skill, items that you can theoretically craft -- say, lightsabers and bracers for Force users as an Artificer -- can be "Reverse Engineered."each self-created item you Reverse Engineer has a chance to teach you a recipe to create a better version of that item.Occasionally when your companion comes back from a crafting outing, you'll get a message saying something along the lines of "They did an exceptional job!" Check your inventory, and you'll find that your usual crafted item is actually a little unusualOverall, it's a system that I think I will be using regularly, perhaps even compulsively. I can see every spare credit going towards advancing my crafting skills, and every item I create being broken down in the hopes of learning a more potent version.
Trollsbane is correct again. Only what is on the site.
This is a nice crew skills IGN preview, filling in some of the gaps which some may not have known about yet. Heres the link:
