Not sure if it is the actual fight that is so epic about this one, but from bleach Kira vs. Abirama Redder (the fraccion) was unbelievable. I never liked kira till the end of that battle, but he was epic in it. I missed the dubbed episode, but I hope they did it justice.

The best battles thus far though had to be during the War of the Best arc. The entire arc was pretty much one giant battle. This is a great AMV that shows glimpses of the various fights. SPOILER WARNING for those who have not seen the series but plan to. I highly recommend it as well if you like shows like Fairy Tail, Bleach, or Naruto.

Not sure if anyone has mentioned it (since some people posted only videos and I can't see those while at work), but Tengen Toppa Gurren Lagann. The final fight in that is beyond epic. Can't provide link due to aforementioned problem, but it'd definitely be worth your time to watch the entire series anyways. I haven't found a better Anime yet, and out of everything I've ever watched it definitely ranks in the top 3 at the very least.

Final fight of Full Metal Panic 2 is pretty badass too. Umm... The very first fight of the Soul Eater Anime is beautifully animated, shame it didn't continue for the rest of the season. And another one that sticks out in my mind is Edward Elric vs Greed in the first Full Metal Alchemist.

Can't think of many others, beyond ones already mentioned. Especially the DBZ and Evangelion ones, those two shows were a huge part of my childhood.

Kenshin fights. The Saito fight was awesome and I loved all his Enishi fights in the Manga.

Darker than Black had some sick fights, I loved Hei v Wei.

of course I always loved the Code Geass fights. I am a Code Geass junkie so...

This one is pretty old, The last fight in the 2nd Fatal Fury movie between Terry and Krauser, for some reason
it's one of my favorite fights and really the best one of the whole movie =P

Just too bad it wasn't the last fight in the birdy OVA.

While the 1996 Birdy is pretty badass, the aesthetic of the fighting animations are pretty standard, albeit of high quality. What makes the Decode animations stand out, especially in the final fight, is their incredible fluidity. I can't really think of other anime than Noein, possibly Kemonozume that has anything of the same.

Hellsing Ultimate and Cowboy Bebop (series and movie) have the best fight scenes IMO.

Bleach final main arc fight scenes are good too (Ichigo v Bakuya, Ichigo v number 4, Ichigo v Aizen).
Naruto has good fight scenes too, my favorite is Sage mode vs. Pain

It seems the consensus that giant fighting robots are cool so I found a couple scenes I remembered

This show has such amazingly beautiful fight scenes yet some are just so bloody
