Minotaurs and Centaurs have both been around forever. They actually seem to have rolled the minotaurs back and made them more primitive in the latest sets.

Minotaurs have basically been the same overall throughout their history and they only have 31 cards so far, which is less then one per set. For the most part all they are is the Hill Giant that just fills the last few slots of a set to make some sort of limited fodder. There are a few exceptions of them being a little more, but those are usually special occasions like Zedruu or Etherium Horn Sorcerer, but they haven't found their niche. Then again, when it comes to red races, if you are not a goblin you don't have a place in red. Orcs, dwarves, giants, and minotaurs have the same problems. Dragons are the big red creature, unless hydras start showing back up in red again, and the middle creatures are usually left to random one shots or beasts.

Red definitely needs a reworking soon.

The only thing that makes me think they used to have plans for the Minotaurs were their Shamans, which pointed to a tribal culture, and the flavor text on the Hurloon. They've given themselves leeway to create something more than primitives, but they keep falling back on crap like Canyon Minotaur.

I have always wanted to make a deck with that card at the front, use some enchantment to change every creatures type, and just start playing big creatures from my hand.

They definitely have been painting them poorly and they could easily use the whole shamanism, bloodlust, or nature's soldiers type of characteristics for them, but for some odd reason they just keep doing the same Hill Giant type of card.
