It's about how it was said just as much as what was said.
Notice that it was said over text, which can either help or hinder the case. In this situation, there are three factors:
1) The word was capitalized.
This indicates that a proper noun such as a nationality or location was referred to, not the bird. A shortened species name is not considered a proper noun. (Compare "turkey" with "Ocellated Turkey".)
2) The word was shortened.
This also indicates that the user was not referring to the bird. Who the hell calls a turkey a turk? Turk, however, is often used to refer to someone from the nation Turkey.
3) The word was used in a derogatory fashion.
Saying "What are you, a frikin Turk" indicates that the user's opinion of Turk is not pleasant or desired, and/or the feeling that being a Turk is somehow less than optimal.
These three things mean that it was, essentially, a racial slur.
That said, let's drop it.
