The void is still a magic force that elves can and did have access to before. As the Locus Walker said, there have been other students, but none as gifted as her. While there probably weren't a whole lot of gifted practitioners of the void, there are sources for them to study, such as in Undercity where the Cult of Forgotten Shadows teaches one to wield and balance both sets of powers. The Discipline spec is entirely about balance, and so elves would have some capacity for understanding this notion. Outcasts and hermits who worships dark arts like shadow magic isn't unfamiliar -- we usually run into these sorts of lunatics in run-down ruins or broken down houses in the middle of nowhere and are told to fetch their heads.
Experimenting with a school of magic isn't required to be taught by a specific person, especially when there are other specialists or even just trainers in general to teach you. Especially for Demon Hunters, who want to learn any way to use whatever power they can to get back at the Legion, it would make sense for someone who treads in shadow magic to be reached out to for training by a Demon Hunter and directed to Illidan in Outland.
Honestly a character like that can't hope to stay sane. Both Demon Hunters and Void Elves are already the exceptions. The survivors of a process that drives the minds of most to madness or monstrosity.
With both Fel and Void tearing at your mind and transforming you, there's no way you can legitimately still be on Azeroth's side.
However, if we're just thinking up crazy combinations, then I say let's create this Void Hunter, kill it, and then raise it as a Death Knight, to create the ultimate Black Knight!
As for what combination class would be the most powerful? I'll have to go with Lightforged Demon Hunter, like Xe'ra tried to create. All the abilities of a Demon, plus the strength and purity of the Light. There's a reason Lorthraxion is ranked so high among the army of the Light, despite being a constant reminder of the enemy. He has managed to prove himself super capable.
If you had a void elf demon hunter it would destroy the azeroth universe. It's putting that much edge into another edgy thing, same results as putting a bag of holding in a bag of holding in D&D.
It's not a matter of having the time to turn into a void elf, it's the fact that they would have to infuse their body with void, which would have disastrous or at least chaotic effects on a demon hunter that the average blood elf scholar would not have to deal with.

Void Elf Warlock exists so clearly mixing Void and Fel isn't always going to end in an earth-shattering kaboom.

Demon hunter training isn't some weekend retreat you can just jump back and forth from. a large group of them lose their shit, or are consumed by the demons they bind to, I doubt Illidan or any of his instructors would just be like oh sure go train in void and come back whenever.
A Void Elf who sacrificed everything probably shaved beard and new hairstyle.
If you like time travel, yeah. Jump around...15 years? into the future, become a void elf and go back to your timeline 15 years ago. Easy as that. No problem, right?
The point of their training and the point of "the birth" of the void elfs is not the same. Not nearly the same.
In both cases they have the class due to the shadow spec making sense for them... I don't think they would give a race a class that is purely 100% non-canon (regardless of how you might feel about holy cows), so your argument bears little weight against void elven warlocks
The elves that become void elves now were alive during the time of the Demon Hunter training, they would just become void elves on their own through either their own training or training under others like Locus Walker before going to Illidan.
No reason they couldn't just train in void before seeking him out in the first place...

Some make the cut to be Demon Hunters, some don't. But one already versed in taming shadow magic and not succumbing to insanity would be more familiar with dealing with dark magic like controlling demon souls than just some angry laborer who just lost his family.
And as silly as your example is, don't pretend that a lot of the heroes who lead the factions aren't multi-classed. We see tons of examples of multi-classing in notable enemies, as well. Merging skills isn't unfamiliar in this universe to anyone except our player characters for gameplay reasons. (And while we're at it, Kel'Thuzad trained as a mage first, then went necromancer.)
