However, the slice of life shows I'm watching this season are all fantastic (except Ramen is meh), and I won't be ashamed of any of that.

And that was fine for awhile. It was at the point when he began to just use crap tons of fanservice to cover up for shitty story telling that the series took a nose dive.

So since we’re talking about shit taste, I still haven’t watched Stein’s Gate, Code Geass, or Evangelion. I don’t really enjoy shows where time travel is a large part of the story (though I did enjoy Erased, his mom’s a boss) and mech heavy shows like Gundam (though I do like shows like Franxx, Re:Creators). Am I right in steering clear of the trash that is those 3 shows?

Absolutely not.
If you liked Erased, there's no reason you won't love Steins;Gate.

Time travel is core, but they're very similar overall.

Steins;Gate is time travel done really well. I found it to have a slow start but it definitely picked up. I didn't really enjoy Code Geass and kind of auto-piloted through most of it. I didn't really like any of the characters and the art style bothered me a little. Evangelion is one of those shows that you're going to love or hate. I didn't think it was anything special but it was hella stylish and Asuka is the OG waifu.
