Why wouldn't you be able to keep them? I don't see Blizzard ever removing races.

Yes we keep them, we didn't go thru all that trouble to unlock them for nothing.
Why do we need them? Aside from an mmorpg always expanding over time, new races being added is always a nice touch. And since they're based on models of already playable races, it won't take years to implement them either.
