You can, though! You can know their eye color, and you can know if they're on drugs, has mydriasis, or has a brain injury(dilated pupils). You can tell when someone is lying if they're shifting their eye a lot and to a specific direction(not all that reliable, though). I'm sure there are other things that I can't think of.
