If you have similar rules on food production to the UK, if it says pork, chicken, beef on something as an ingredient then it has to actually be meat from that animal. Organs (offal) do not count as meat so can't be used if it says 'pork' for example.
As to how they get that 'meat' in some cases and are still allowed to call it pork, chicken or beef, well that's another thread altogether . . .
