Well, the game used to have that... but it got removed with so many other things.
"Fun" is very relative. It certainly was fun for some specs to be completely useless because boss was immune to a specific element. Or couldn't be poisoned. Or diseased.
And it's not like it made the bosses more interesting. Hydross wasn't more "fun" because nature damage didn't work. Al'ar making mages go arcane? Same thing. Or just (caster) shaman farming nature immune elementals back in vanilla. That was "destroying fun", not Blizzard.
Could you imagine the shit show.
Fire mages on fire resist bosses
Frost on Frost resist.
Shadow resist and shadow priests.
it would guarantee a Taliesin "It was a shit show obviously." skit.
It most certainly did make bosses more interesting. A boss that's not resistant to anything is a boring boss, mechanics aside.

Yeah because the game is so fun right now. So many people play that blizzard is reporting sub numbers el oh el. With your logic they should just give everyone one button that does 100 damage and can be used every second. Thats it, everything needed because anything else is useless fillers that are not fun

Like, you can make a case for certain mobs taking more damage from certain things, i liked how in the Argus encounter, those Constellars took more damage from certain damage types.
However, there were enough adds for every damage school, if a certain encounter has just one boss (mob) which takes 100% additional [school] damage, it's stupid as well.
Stuff like that can exist within raids in my opinion, but it needs to be made sure that those specs affected negatively by it, can still participate and be useful within the encounter.
In the outdoor world, it just doesn't work anymore, any shadow / affliction would be unable to kill mobs that are immune to shadow damage.
Same goes for Fire mages, you would literally have to select another specialization to kill those mobs.
Ill up that by one and say i "killed" Hydross as Elemental.
This is such an retarded argument and could be used to literally bash anything in the game right now.
Dps hybrids are actually competitive? Well the game was more sucessful when they weren't!
Prot pally the only tank capable of AoE tanking? All tanks can do it now, thus we should revert that as well!

We had that in classic, it sucked. Elementals were immune to nature as well as their own element (fire ele = immune to fire and nature) as well as bleeds. Undead were immune to poisons and bleeds. Mechanicals were immune to poisons and bleeds. Most dragons were immune to fire. There were others.
It'd be fun if this was a thing but only if every class had ways to deal with it. So rather than using your usual rotation, maybe you need to use some other spells you don't normally use.
Personally I'm surprised we haven't had a boss that has resists in phases. So throughout the fight they change resistances and you have to know which abilities to use when. So melee have to use cooldowns at different times to range, frost mage at different times to fire mages, stuff like that. Would mix up the formula a little bit without making any class irrelevant because they wouldn't be immune to that damage type all the time.
Enchanting: Scroll of Burning Ice - Deal Fire damage instead of Frost for X mins. Minor scrolls are cheap to make, but their effect disappears on death. Major scrolls are more expensive, but last through death.
Inscription: Rune of the North - Deal Frost damage instead of Physical for X mins. Minor/major runes could work as well.
Cooking: Stew of Oppressive Shadows - Deal no Shadow damage, dealing Physical damage instead.
