I was hoping that Sylvanas would direct her attention to Thrall, Zappyboi, and Anduin after she killed Saurfang and then get impaled by Bannerbae and then fleeing wounded...but I don't do the writing.

Sylvanas killed Saurfang because he finally got to her and she had completely lost her composure.

Her plan is to get as many people killed as possible. After killing Saurfang and her intermperate outburst, she realised she had lost the Horde entirely. Killing Thrall or Anduin at that point wouldn't facilitate the goal of maximum deaths, as everyone had turned against her.

Far better to leave them alive so they can direct Alliance and Horde forces into the N'zoth meat grinder without being stuck looking for new leaders.
