Diden't they kinda tease Nightelf paladins in legion where did they go?
They did more than tease. They litterally had a questline where you helped a Priestess of the Moon become a paladin. Later you rescued her ghost uncle, who also (for no reason whatsoever) turned out to be a protection paladin.

They stopped caring about race/class balance a long time ago. I don't remember where they said that it was more lore and flavor driven now. Which means there should be nelf paladins at some point as their path to paladinhood is not so different that how the Tauren started having paladins of their own. Kul Tirans should have paladins as well since they are technically just humans from another country and many of them were out and about in the world already.
Personally, I'm rooting for Mechagnome druids! The robotic beast models are already there and they could 'transform' into those.
Maybe not druids, but it seemed odd that Mechagnomes can't be Paladins. I mean, they are basically enhanced by titanic machinery, law and order. They could basically be miniature'esque Avengers. Never made sense that they could be warlocks though... Same goes for vulpera.

they should just ditch the class restriction all together, isn't like logic and consistency are on the blizzard portfolio anyway

I mean, why not? Plenty of Grimtotem rogue mobs in Stonetalon already. Besides, again to use D&D as an example, you can play a Goliath (an 8ft tall stone-like giant) rogue and absolutely stealth past everything. Also, sudden flashback to the time my entire D&D 3.5 group was utterly destroyed by a group of invisible minotaurs....

Honestly wish they'd just ditch the archaic race/class restrictions already. Lore stopped mattering for this game a long time ago. If anyone has a problem just say "Oh the PC is an outlier" and let people play what they want.
