It might sound like a lot, but it’s not. I have friends on Strava that do 400-800 a week, some of the top cyclists there do more than 1,000 miles a week.
Though I am pushing 38 so perhaps at my age it’s pretty good...

I bet it depends a lot on what kind of roads and such you have avalible to you or if you do it on a stationary bike?

1000 miles ? whats the average pace for that ?
I ride outside always, year-round, even through the winter. I never ride indoors or on a stationary bike. Ever. It's too boring!
Here in Chicago it depends. My last century was south through Lansing, then west down the Old Plank Road Trail to Tinley Park, Forest Park, and Orland Park, all of which are in hill country, so for like 30 or 40 miles of my ride it was non-stop hills up and down. I would crest one hill to see another a few hundred yards away. Blech.
But typically my rides are mostly on flats with some hills here and there.
Depends on their ride, but they're usually people who have been training since they were much younger. Generally anywhere from 11 - 20 mph a ride. I personally average between 15 and 17 mph lately.

That's not as bad as I thought it was. So around 2 hours a day.
Not at all! First you try to vary routes (though I have some favorites, like taking the Western - 95th - Lake Front Trail route loop) so that you see new things, but also it's a wonderful way to escape everything. I get away from my family, my work, stresses, everything going on and can just zen out and let my mind wander while my body does its thing. I wish I'd started cycling much, much earlier in life. I've loved it for the past few years.

That sounds good for you! Personally any prolonged cardioish bores me

I am kind of with joy with this. Doing the same path for a long period of time just gets boring after awhile.
Cardio is boring! That's why cycling is so much easier. You can take in the sights, and a good portion of your mind is occupied with your speed, cadence, staying balanced, watching the road and the cars around you...

WILL WE WIN??
I don't mean cycling isn't cardio. It is. I just mean that unlike running on a treadmill or an elliptical, cycling requires so much more of your mind to accomplish (outside, at least), that's it's not boring like other cardio activities.
