There are no mechanics like that in WoW. Short of maybe playing as a Forsaken, all player characters pretty much fall into the "____ good" category.
depends on how far you are willing to go.
there have been plenty of leveling questchains where you do questionable or downright evil things that were required to unlock max level content or flying or stuff like that in the past.
and ofc in shadowlands you literally use the ground to dust remains of people tortured to second death to make your shiny gear.
and god forbid every quest where you have to save 10 dudes, and then you just leave the 11th dude in chains right in front of you.
you may have to get creative.
There are lots of evil questlines in WoW. Most of them are Horde exclusive. Off of the top of my head:
Horde only:
- Torturing a Kirin Tor mage for information in Borean Tundra.
- That quest in Hillsbrad Foothills where you stumble upon a field of helpess villagers buried up to their necks in the dirt, begging you to dig them out... and you use the shovel to whack them on the head and split open their skulls.
- Stonetalon Mountains questline where you enlist as an officer in an invading army and bomb innocent villages.
- Silverpine Forest campaign where you launch an unprovoked invasion of Gilneas, massacre people and then raise them from the dead and then enslave them or kill them again. Using gas and biological weapons.
- Horde scenario of Theramore's Fall.
- Jade Forest intro where you reenact the opening scene of Apocalypse Now by invading a continent of hapless Panda villagers and spraying people with lead and dropping napalm and burning people alive, and lying to the natives and turning them against each other.
- Another unprovoked invasion and slaughterfest with the Horde Stormheim questline.
- War of Thorns questline where ontop of the unprovoked slaughterfest, you get to be environmentally unfriendly and chop down tree people to harvest them for firewood. Also committing mass genocide.
- Etc
Death Knight stories:
- Death Knight intro: being raised as Darth Vader, waltzing into innocent houses and slaughtering families in their homes as they beg for their puny lives. You can also torture people for info.
- Death Knight class order hall questline where you waltz into a Church and start slaughtering Paladins on a whim (admittedly the story writing was pretty freaking stupid here).
Even if you don't do any of the Horde questlines listed above, playing as Horde makes you as a neutral character at best, if not somewhat evil, simply because you are a soldier who fights for a historically morally bankrupt regime that constantly launches unprovoked invasions and genocides (especially after you continue working for the Horde after they burned the tree, even if you didn't participate in it). The only way you're not forced to be evil (and don't become tainted by association) is if you play as an Alliance character (who isn't a Death Knight), as they have no mandatory storylines where you have to do evil stuff and the Alliance is generally not evil. There is only one evil Alliance quest I can think of and it's optional, and does not reflect upon the organization as a whole.

It's pretty much like Elder Scrolls where you choose which rides to do. Want to be a thief who steals from people? Do the thieves' guild questline. Want to be an unrepentantly evil, cold blooded killer? Join the Dark Brotherhood. WoW is the same way. If you want to be evil, you play a Horde Death Knight.
Star wars the old republic is the only MMORPG with such a system as far as i know

You could do it, but WoW isn't a single player RPG where it is OK/interesting if the game limits you based on your choices.
As suggested you could skip all/most quests or just the ones that goes against your "beliefs" and level up by picking flowers or something like that.
1. WoW is a multi-player game, so making any choice, apart from picking your faction, that would limit you in your ability to play with others isn't good
2. Blizzard itself puts "Gameplay first" amongst its values, which just makes the above even more essential
In order to level up you have to kill. Unfortunately, there is no capture mechanic. There is no way to be lawful good. Well actually, you can level up how Doubleagent leveled up via gathering herbs and mining nodes.

Actually in this case Alliance outhorded the Horde. Both versions had rogue commanders who enslaved local populace, and both had the theme of coercing locals into armies to make them fight each other. But only Alliance had a good old fashioned scene of killing defenseless combatants at the start.
Kinda sucks, hoped it would be Hordes domain, but whatever.
well the horde quest where you smash in the heads of humans that are partly buried in the ground with a shovel or you can just release em is a good example for this

or as darnassus did burn i didnt save a single nightelf from the fire you can also save a few em but it makes no difference
Is it possible to play a character that only does good in the game? The current Alliance population numbers say no
I'm pretty sure we all qualify somewhere on the sliding scale of lawful good to true neutral somewhere. We're either doing good for goodness sake, using evil magics to ultimately protect the world, or true murder hobos who ultimately wind up accomplishing good because some guy gave us 500 artifact power to kill a god.
Horde's always been a bit more evil just because their whole shtick is how they were evil, and are on paths of redemption of one form or another. With the story going on so long though, it's easy to look back on all that evil and go "wow, they evil."
But post-BFA they're definitely supposed to be closer to that Thrall ideal, having cut out the biggest tumors on their reputation more thoroughly this time compared to the Garrosh era. Time will tell if that all ultimately becomes meaningless depending on what happens to Sylvanas. (see: Shadows Rising, Tyrande's Ultimatum)
My druid levels off herbs and ore because I only play him when I'm too high to fight things.
