I'd say stick with sea of sorrows (partly because I do like that name). If we're really looking for a change though I'd vote Northern Shiverpeaks.

According to this that server is US. The one you're thinking of is Far shiverpeaks... Far. As in the EU is Far away from where I live.

I played both Far Shiverpeaks and Desolation and i say FS is better then Deso, but again doesnt matter since we aint going to be there with the guild ^_^

As far as I know there was no such distinction as a pvp/pve server flag (like in wow) as there is no such concept in game.
AkA no Faction v Faction. You just have guilds on the servers that focus on different play types, and each server tends to have a mix of all the different types.
Theres WvW guilds, PvE guilds and PvX (bit of both)
