Ultimate only has the 4 actual DLC's, Gun Runners & Courier's Stash are basicly DLC's that just add new weapons and so.

ultimate has all 6 of them.. the 4 real and the two weapon packs

Seemingly if you're going for it, just get the ultimate edition. It's the best choice.

Could be the fact that she indeed has 2 regenration talismans and stuff inside of her, they can bring her up as long as something absolutely vital isn't crushed. I think Rampage mentioned this in a earlier chapter.
She has become damn tough, that's for sure but by no means is she undefeatable. I'd say Steel Rain is still easily capable of beating the everliving crap out of her.
I can't wait to see how the story will progress now that they're out of Hightower
