What tank class and with what professions give the highest amount of health right now?
I know full stamina isn't the way to go, but I'm curious.

Spartan Phalangite with 525 Warfare and 525 Combat profession.

without any changes, Mining and BS, yes.. With BS being the OP profession. on live realms the situation is as this:
All professions (with 2 exceptions) benefits translate into a +80 stat boost.
First exception is Alchemy. There you rather save on the need for flasks on your daily tasks. Flasks of Enhancement give you that +80 boost, and doesn't get consumed, so you always have it. Yet when you enter a raid, your boost is gone, because you have to replace it with the common flask for your desired stat. Since others can use common flasks too, you are basically missing the +80 boost in raids or any environment where you use those flasks or elixirs.
Second Exception is Blacksmith. You get an additional gem socket to bracers and gloves. They stack with enchants. That boost translates into +100 (each slot with an epic gem).

I'm fairly certain that Mixology still gives extra to your stats on flasks, also doubles the flask length. Its +80 for primary stats and +120 extra for Stamina, just like all the other main profs.
Mining just gives you a static 120 Stamina, so if you plan on doing anything else its not really the best.
JC gives you 123 extra Stam compared to blue gems but if you have epic gems it is currently (until mop) the weakest because it is only +93 stam compared to epic gems.
Also BS with current epic stam gems would amount to 150 extra stamina, so this is technically the best right now. But come mop it will go back to in line with all the rest of the professions.
Gathering Profs are generally the weakest for min maxing because they lock you into one stat.
