I'm reading up on which type which thing atm on a wowhead guide.
Which are the best 3 to start with? I have enough rare pets that I should be able to find 3 that work well but don't know a starting point. Looking to find the best combo for just general leveling. Anyone have suggestions?

Just go with 3 seperate types. Its relatively easy to find critters, beasts, flying and aquatic in the wild so try to level 3 out of magic, dragon, elemental, robotic or undead.
