So epic reaching it for the first time as a child, damn mana fortress.

Akylios (rift), Laethys (rift) prolly the best two boss fights I've ever done
Yogg (hc)
Lich king (hc)
Onyxia wipe animation ^^
Maelforge (rift)

And the list goes on, but that's the most memorable for me

Dr Robotnik from sonic 1 on the SEGA Mega Drive.... I raged so hard trying to kill that guy, I was about 6 at the time ^^

Crawmerax from Bordlerands was pretty damn epic the first time.

Have to agree with Ornstein and Sough from Dark Souls as well. That fight was hard as nails as a new player, there's a reason Anor Londo is a summon hotspot haha.

Algalon and Yogg from WoW, both great fights.

Xaero from Quake 3 (accurate bastard...)

Bowser from New Super Mario Bros. Wii (epic for a Mario game anyway)

Vaelastrasz in vanilla. What a great dps race we had there.

Also Nefarian in vanilla. At mage calls where all kinds of animals running around and phase 3 where all those undeads came for you and literally smelted your oldschool PC.

The duel with Sam in Metal Gear Rising just has this epic feeling of 1 vs 1 with badass music, Armstrongs fight is also great, just wish he was a bit harder since his attacks are way to easy to dodge and avoid but still he was a great fight and with the epic song playing in the background, i delayed the fight for several minutes just to enjoy the song.

Lingering will from KH2 FM anyone who fought him knows what i'm talking about. Fighting him on lvl 1 critical mode is also so fun and so insanely hard you want to tear your hair out but the feeling when you kill him is just... greeeat

God of War has had some of the best fights I have had the pleasure of fighting, just look at this video, this isn't even the best one lol.
