retpaladin.com used to be a fairly relevant paladin blog. Tankspot was the go-to place for prot. If you go through the elitest jerks threads and look at the theorycrafter's blogs you'll probably find the best blogs for paladins out there.

Maintankadin has always been the place for prot palas. Thecks blog (sacredduty.net) is pretty awesome for prot.
