What do i use to monitor my computers temperature ?

Like the cpu / gpu, etc.

    Any recommended programs ?

Then once I know the various components temperature, how do I know if they are running at a healthy level ?

Coretemp and CPU-Z are a good way to monitor CPU activity/load/temp. Speccy shows system information in a nice neat arrangement. HWMonitor gives good fan speed and power info.
