I could whip something up, what sub-races are possible for Night Elves? I could do a Human recolor, or Human/Nelf Mashup halfbreed thing.

Loving the Vrykul themed human, I've wanted to play something nordic ever since we had WotLK.
As for NE subraces, maybe something hinting to the Naga or Saytr. Not a clue otherwise.

Actually, Highborne does not even have different colour from normal Night Elves. It was social status.

Golden eyes had only the ones with great potential of magic or druidic power, like Azshara (the Highborne) and Illidan (non-highborne). Blue skin? No. Azshara's model has blue skin, in book it was described like 'deep purple'. But other Highbornes had skintones like blue, purple, violet and other else. They hadn't brighter, darker, more blue or something another skin than other elves. Also the hair - ingame most of arcane reforgers or mage trainers has white just to be distuinguishable. Personally, I would like to see a Illidari, Druid of the Flame, Druidic and Satyr look for you to try on the new Kaldorei model, if you feel like doing that!
