I've only read a couple of Star Wars books back in maybe 6th grade. Most notable book I remember reading was Shadows of the Empire (ok, I had an N64 at the time too and the game as well :P)

Haha, yeah, but it was still neat. But maybe it was because I read it as a kid. I played Kyp and had the suncrusher as a ship in a tabletop RP for a bit.

I too enjoyed these books when I was a kid, but as I grew older they shared the fate of the prequels and fell out of favour for many reasons.

Specifically, what I'm looking for is a book set in Star Wars universe but not directly related to the six episodes (KotoR timeline is OK, but six episodes are everywhere and get boring eventually). Interesting characters and plot are very important. Also I would like protagonist to be a Jedi growing in force throughout the book. Perfect if it is somewhat similar to The Name of The Wind: the protagonist starts as an anonymous kid, then gets into academy and studies there, with it being one of the biggest parts of the book. Star Wars Harry Potter, if you want, only preferably not for kids.

Are there any decent books like this?

Hands down one of the best book series of the bunch, shows the dark side of the clone troopers and the old republics civil war.

A long series about 19 or so books, it is deep and dark, from multiple main story line character deaths to the tune of 200trillion+ people killed over the course of it. It tells a star wars story that would be amazing if it was immortalized in tv series or movies but alas we will never see it.

Very good trilogy showing one of the brightest and best minds the imperials had to offer.

is another good series if you were a fan of rogue squadron this follows them and wraith squadron up to and including the retaking of corusant. Dont forget the book i, Jedi which is a great book to read following the finishing of this series.
