I couldn't play without the first 3

These are the mandatory ones: WeakAuras and DBM/VEM/BigWigs. Without those, the game would be radically different. They have shaped the PvE game in ways nothing else has. The reason we see such complex encounters today is because of the almost blanket usage of DBM and similar addons, VEM being the most useful now because of it's incredible sound alerts.

Others that may be worth mentioning are Skada, ElvUI (compilation but ubiquitous enough to mention), TidyPlates, Prat, Altoholic, Vuhdo/Grid, oQueue, Auctionator/TradeskillMaster/Auctioneer, NPCscan, AffDots, OmniCC, MSBT.

Although really, you should make categories for the addons. There's UI addons, and then there's Quality of Life addons, as I see it. E.g. DBM, Scrap and Postal aren't big UI addons for me, but they're great for quality of life. And you can divide the UI into specific elements that can be modified, such as unit frames/minimap/action bars. And really, which specific addon you choose to use for either element depends on individual taste.
And to be honest, sometimes a UI can look really fancy, but it will be so much more efficient and fun if you also include the QoL addons.

So, I'm going to make two small lists with my favourites of each type!

UI addons:
