Yes, they can be, and no, it doesn't consume your roll and prevent you from getting an actual item from coining the boss. It appears to just tack on another individual roll for the pet like the one you get upon killing the boss, in addition to the actual coin roll.

I've received a few Sha of Pride pets this way along with a Living Sandling from Tot lfr.
Still trying to get the others.
