Probably wasn't the only reason. Likely they already had been reported in the past for other stuff and the naming violation was just the last straw.

That's what I'm doing right now. 12x lvl 96+ chars and all tailor with a mix of other professions. Bags aren't affected by gear and sell really steady.

It has nothing to do with them being offensive. It has to do with them being trademarked names:

Even a minor offense (like a trademarked name) can result in a permanent ban if the offense is repeated enough:

My profession spread is fairly straight-forward:

    5x Inscription
    4x Tailoring
    3x Leatherworking
    3x Blacksmithing
    2x Jewelcrafting
    1x Engineering
    1x Alchemy
    1x Enchanting
    1x Mining
1x Herbalism (gathering profs for achi only, will replace).

Garrison set up is mostly the same: Inn, Barn, 2x Prof, Salvage Yard. All my inscription CD items go to the upgrade items, and the rest of my bloods go to Tailoring/LWing upgrades. Blacksmithing only makes weapons. I haven't got everything set up yet, but so far I've been able to clear my items before I build up excess inventory. Works pretty well for a bit of effort. I made a bloods spreadsheet to keep track of how many bloods I was getting and what kind of gold output it gives for the time put in farming traps.

I'm going to focus on gold making as much as I can at first and previously my professions were all in a mess and I just couldn't be bothered to sort them out. This gives me an opportunity to correct this.

So far my plan is to make all the characters have the following garrisons:

    Large: War mill + Bunker
    Medium: Barn + Inn
    Small: Salvage yard + 2 x professions

With regards to professions however, I'm not sure which spread to pick. I do not want any gathering professions as the garrisons will keep me stocked up. The following is what I have provisionally:

1 x Engineer - Pets and guns are so dirt cheap that having more than one engineer isn't that great on my realm
1 x Leatherworking - Can only sell mail and leather armor and not much else. Don't think I need more than one of these either.

2 x Blacksmith - Weapons might be a lot more popular with upgrades going to 670 so 2 might not be enough perhaps
2 x Tailoring - Bags will always sell
2 x Inscription - Trinkets and weapons that can be upgraded to 680 / 670 respectively, I'd imagine they will remain popular
2 x Jewelcrafting - Not sure about this as I never got into JC before I was banned. I'd assume theres good demand for gems but even if they don't sell the daily might make up for it?

6 x Alchemy - To produce savage bloods and flasks.
6 x Enchanting - Enchants will always be in demand. Am I going overboard with 6 however?

Is there anything you'd do differently?
Your knowledge of professions this expansion is laughable.

1x Leatherworking - LW makes armor and upgrade tokens for five classes out of eleven, and that's only worth having one of?
2x Blacksmithing - Weapon upgrades sell like shit. The plate classes are among the most popular in the game and you should be selling armor tokens
2x Jewelcrafting - JC is garbage. The only good thing about JC is the daily for ~225 gold per day. The gems sell for shit on my server (1.3k max) since sockets are so uncommon and everyone has different stat priorities so there's no demand for a specific gem
6x Alchemy - LOL. Alchemy is the absolute worst profession for making money and it won't get any better in 6.1. 50 catalysts for a blood is a little over two days per blood, which is dogshit. Barn gives two bloods per day, plus fur. Bloods sell like crap anyways right now since everyone and their dog has five barns and the price is only going to go down. The only character alchemy should be on is your main for 2x flask duration and crafting potions during raids.
6x Enchanting - Also stupid. Enchants sell better than gems but not by much. A lot of people don't even buy the gift enchants because it's 50x the price for +20 stats.

Your large plots should be nothing + nothing since large buildings are useless besides the barracks. You can't have both the War Mill and the Bunker and I have no idea why you would even if you could. Also without a lumber mill or trade post I hope you enjoy waiting a month to accumulate enough garrison resources to have a level 3 garrison + level 3 inn + level 3 salvage + level 3 barn + 2x level 2 professions. And doing the barn elites on eleven characters is going to be a blast, not to mention the mobs will probably annihilate your non-tank alts unless you get them to around ~630 or also have a level 2 barracks for the bodyguard.

Also you are obviously lying about being permanently banned for a naming violation so I'm not sure why you would even bring that up.

It's like 30 minutes per week per alt give or take. Group finder, look it up.

What I found to sell for sure and fast is the trinket upgrades from Inscription..other than that, I guess all others are on the same level..I would chose 1 of each prof except for inscription that I would take multiply. Then, I would chose to all my chars to have enchanter's study to run work orders for crystals and also Gem Boutique level 2 for the daily quest.
The trick of selling a FFA-PvP MMO is creating the illusion among gankers that they are respectable fighters while protecting them from respectable fights, as their less skilled half would be massacred and quit instead of “HTFU” as they claim.

I'm not sure why you think he's lying, if he repeatedly made names that were trademarked, he could have been permanently banned. Someone already posted a link it in a couple posts above yours, even.

I once got banned over 3 months for a naming violation and can you believe that they actually tried to charge me for the forced name change they issued ?
